Zucchini Fritters

Ingredients

  • 2 medium zucchini, grated (about 2 cups)
  • ½ tsp salt (for draining zucchini)2 large eggs
  • ½ cup flour (or substitute with breadcrumbs for extra crunch)
  • ¼ cup grated Parmesan cheese
  • 2 green onions, thinly sliced (or 2 tbsp finely chopped onion)
  • 1 garlic clove, minced
  • ½ tsp black pepper
  • Olive oil or vegetable oil, for frying

Optional Garnish/Dip

  • Fresh herbs (parsley, dill, or basil)
  • Sour cream, yogurt, or tzatziki for dipping

Instructions

Step 1

Grate zucchini and toss with ½ tsp salt. Place in a colander for 10 minutes, then
squeeze out as much liquid as possible using a clean towel or paper towels.

Step 2

In a bowl, whisk eggs. Stir in flour, Parmesan, onion, garlic, and pepper until
combined.

Step 3

Fold in the zucchini until evenly coated.

Step 4

Heat 2–3 tbsp oil in a skillet over medium heat.

Step 5

Drop spoonfuls of batter into the skillet and flatten slightly with a spatula.

Step 6

Cook 2–3 minutes per side, until golden brown and crisp.

Step 7

Transfer to a paper towel-lined plate to drain.

Step 8

Serve warm with a dollop of sour cream or yogurt, and sprinkle with fresh herbs.

Tip: If you want them extra crunchy, add 2–3 tbsp breadcrumbs into the mix.
