Spring Greens Salad

Ingredients
- 3 cups fresh spinach from the farmers market
- 3 cups fresh arugula from the farmers market
- 1 cup of our fresh sprouts (we offer a variety of different sprouts)
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, thinly sliced
- ¼ cups toasted nuts (almonds, walnuts or pecans)
- Optional: feta cheese or goat cheese
For the dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice (or apple cider vinegar)
- 1 tsp Dijon mustard
- Salt and pepper
Instructions
Step 1
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon, salt, and pepper
until smooth.
Step 2
In a large bowl, combine our spring greens, sprouts, radishes, cucumber, nuts, and
cranberries.
Step 3
Drizzle dressing over salad just before serving and toss gently.
Step 4
Top with crumbled cheese if using.
Tip: This pairs beautifully with grilled chicken, salmon, or a simple soup for a full meal.
