Roasted Spaghetti Squash

Ingredients
- 1 medium spaghetti squash
- 2-3 tbsp olive oil
- 2-3 garlic clove
- 1 tsp dried oregano
- Salt and pepper
- Optional: grated Parmesan, red pepper flakes, fresh basil, or toasted pine nuts
Instructions
Step 1
Preheat oven to 400F.
Step 2
Prepare squash: cut spaghetti squash in half lengthwise and scoop out seeds.
Step 3
Season: Brush the cut sides with olive oil, sprinkle with salt, pepper and dried
oregano.
Step 4
Roast: Place cut-side down on a baking sheet. Roast 35-45 minutes until tender.
Step 5
Scrape into strands: use a fork to gently scrape the flesh into spaghetti-like strands.
Step 6
Sauté (optional): In a skillet, heat 1 tbsp olive oil, sauté garlic for 30 seconds, then toss in the spaghetti squash strands with extra seasoning.
Step 7
Serve: top with parmesan, fresh basil, or pine nuts.
