Kale Salad

Ingredients
- 1 bunch of our curly kale
- 3 tbsp olive oil
- Juice of 1 lemon (or 2-3 tbsp apple cider vinegar)
- 1 tsp honey or maple syrup
- 1/3 cup sliced almonds (roasted)
- 1/3 cup dried cranberries
- Salt and pepper
- Optional extras: crumbled feta cheese, fresh fruit (we use either an apple or a persimmon).
For the dressing:
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp maple syrup or honey
- 1-2 tbsp warm water
- Salt and pepper
Instructions
Step 1
Prepare Kale: wash, remove stems, and chop into bite-sized pieces.
Step 2
Massage: place kale in a large bowl. Drizzle with 2 tbsp olive oil, lemon juice, and a pinch of salt. Massage with your hands for 2-3 minutes until leaves soften.
Step 3
Make dressing: Whisk the listed ingredients together in a small bowl.
Step 4
Assemble: Toss kale with dressing. Add almonds and cranberries, and optional a sliced apple, mixing well.
Step 5
Serve: Top with cheese and/or onions and serve fresh.
