- Butternut Squash
- 1 medium butternut squash
- 2–3 tbsp butter (melted; or use coconut oil for dairy-free)
- 2–3 tbsp brown sugar (light or dark)
- 1 tsp ground cinnamon
- ¼ tsp nutmeg (optional, for warmth)
- Pinch of salt
Instructions
Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
Step 2
Prepare squash: Peel squash, cut in half lengthwise, and scoop out seeds. Cut into 1-inch cubes (or slice into half-moons if you prefer).
Step 3
Season: In a large bowl, toss squash with melted butter, brown sugar, cinnamon, nutmeg (if using), and a pinch of salt until evenly coated.
Step 4
Arrange on baking sheet in a single layer. Roast for 25–30 minutes, stirring once halfway through, until squash is tender and caramelized.
Step 5
Finish: Serve warm as a sweet side dish or holiday favorite.
