Savory Squash Fries

Ingredients

  • 1 of our medium delicata squash (butternut or acorn work too, but delicata is easiest)
  • 2-3 tbsp olive oil
  • ½ tsp garlic powder½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: pinch of cayenne or chili flakes for heat, fresh herbs like thyme or rosemary

Instructions

Step 1

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Prepare the squash:

  • Peel (if using butternut or kabocha). Delicata doesn’t need peeling.
  • Remove seeds.
  • Slice into fry-shaped sticks, about ½-inch thick for even cooking.

Step 3

In a large bowl, toss squash sticks with olive oil and all seasonings until evenly coated.

Step 4

Arrange on tray: Spread fries out in a single layer on the baking sheet (avoid overcrowding for crispiness).

Step 5

Bake: Roast for 20–25 minutes, flipping halfway through, until golden and tender with crisp edges.

Step 6

Finish: Sprinkle with extra salt or fresh herbs if desired.

Tip: They’re delicious served with a yogurt-garlic dip, chipotle mayo, or just plain ketchup.
