Boiled Artichokes (Classic Method)
Ingredients:
- 2–4 fresh artichokes
- 1 lemon (halved)
- 2–3 cloves garlic (optional)
- 1 bay leaf (optional)
- Salt
🥣 Garlic Lemon Butter Dip
Ingredients:
- 1/2 cup melted butter
- 2 cloves garlic (minced)
- 1–2 tbsp lemon juice
- Salt & pepper to taste
🥄 Alternative Dip (Lighter Option)
Lemon Aioli Yogurt Dip:
- 1/2 cup plain Greek yogurt
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1 clove garlic (minced)
- 1 tbsp lemon juice
- Salt to taste

Instructions for the artichokes
- Rinse the artichokes thoroughly. Trim the stem so they sit flat and cut about 1 inch off the top. Snip the sharp tips off the leaves if desired.
- Rub all cut surfaces with lemon to prevent browning.
- Bring a large pot of salted water to a boil. Add the lemon halves, garlic, and bay leaf.
- Place the artichokes in the pot, cover, and reduce to a simmer.
- Cook for 25–40 minutes, until a leaf pulls out easily.
- Drain and let cool slightly before serving.
Instructions for the lemon butter dip:
- Melt the butter in a small saucepan or microwave.
- Stir in the minced garlic and let it sit for about a minute.
- Add lemon juice, salt, and pepper.
- Mix well and serve warm with the artichokes.
Instructions for the lemon yogurt dip (lighter version):
- In a small bowl, combine the Greek yogurt, olive oil, and Dijon mustard.
- Stir in the minced garlic and lemon juice.
- Add salt to taste and mix until smooth.
- Chill for 10–15 minutes before serving for best flavor.
